Strawberry salad x

Since Strawberries are in season at the moment, I thought I would try a nice healthy salad. I’ve seen lots of photos of salads with fruit in at the moment, so I went with that idea. In my salad I had:

  • Watermelon 
  • Cucumber
  • Feta 
  • Lime juice
  • Salt 
  • Strawberries

I started by cutting up the strawberries. Cut the green leaves off and then cut in half and some half again, if they were really big. I decided to do this all straight onto a plate which I was serving it on. Save in the washing up!
  
I then cut up all the watermelon. I was lucky enough my dad had started to cut down the melon. He cuts the melon into slices and then with a sharp knife, slices down the edge to free out the melon. Once he has done this he cuts it into slices. You can then grab bits out easy when ever you want it. I took about 5-6 slices and cut them up into small chunks. Added them straight to the plate of strawberries.

  
I then used the juice of half a lime straight to the mix. I crumbled up about 1/2 a pack of Greek feta cheese. This gives it a really salty taste which goes so well with the strawberries. 
  
Then the cucumber. To make it look pretty, I run a fork (quite hard) vertically down the skin to make groves. Do it hard enough that it breaks the skin. I used about 1/3 of a large cucumber. Cut them into thin whole slices, and added them to the mix.

  
Mix it all together and then add a good pinch of salt, always taste it and then add more if needed as the feta can be quite salty.

I loved it! It is so fresh but really filling. It’s great for a dinner when the weather is like this. Amanda wouldn’t taste it, she said she loved all the ingredients but not all together on one plate! It would make a really nice treat to take out for a picnic this summer. To bulk it out, you could add some lettuce leaves too.
